Easy Frittata


frittata in a cast iron skillet

Ingredients:

1/2 tablespoon olive oil

1/2 cup chopped onions

1 cup spinach

2 large eggs

2 tablespoon low fat milk

1/4 cup of favorite cheese


Prep:

  1. Heat a small skillet that is oven proof, preferably cast iron. Add the oil. Cook the onion until lightly brown and soft, add spinach and cook until soft.

  2. Wisk the eggs and milk together. Add to skillet and mix with anions and spinach. Let it cook for about a minute without stirring. Remove the skillet from heat.

  3. Sprinkle the cheese over the egg mixture. Broil in the oven until cheese is brown and frittata is firm. About 1 to 2 minutes.

  4. Slice into wedges and serve.
